Does anybody know, why the company behind sierrachart.com has been closed in August 2021? And what consequences does the dissolution have for us, the SC users and customers?

I am using Sierra chart as we speak. They still bill me.
That NZ reference was in 2021. Must be a different entity.

What do you mean with "must be a different entity"? The company behind sierrachart.com is (was) definitively Sierra Pacific Software Ltd. - look at your payment notifications. Last line is always "Sierra Pacific Software Ltd, trading as www.sierrachart.com".

Of course the software works and the staff seems operational. But where is the company?

Sorry, there are (some rare) people, who are interested in who is their legal contract partner.

... I just got the Info, that SC is now in Wyoming. Well the address is at a Wyoming Registered Agent. They offer services for so called letterbox companies or those, which do not have an office or enterprise residence. But there is no legal registration of a company to be found for sierrachart.
