I personally use a simple phone, but wife wants to upgrade to a new smart phone. With Verizon, the choices are iPhone, Galaxy II, HTC, etc. She really wants an iPhone but don't want to be married to Apple. SO, what is the best have it all?

Don't worry about the stuff that spys on your phone.
If it bothers you, install apps to detect/remove the C-wrap.
Security is an imagined situation anyway.
Now days someone is always watching you.
All you can do is be aware of it and do what you can to minimize it.
I use an HTC Android (rooted and spy ware free)
If you aren't geeky, opt for the IPhone it will do what you want and you won't know what you are missing anyway.
If you don't want a phone or company to control your experience opt for an Android.

If you are considering trading or monitoring positions and want a dual purpose device, I would wait for one of the intermediate tablets. Like the Asus MeMo or something similar.
It is a larger tablet and comes with a smaller companion controller/phone.
You could also use a BlueTooth headset with other 7" tablets that have 4G and get the same effect.
The big downside to the 7 - 8 " tablets is they are hard to hold up to your head in phone calls but the bluetooth eliminates that issue.
They also fit pretty well into a woman's purse.
The 'BlueAnt' bluetooth headset has 'voice command'.
It will accept voice commands and read text messages to you or tell you who is calling without looking at the phone.
It is hard for me to recommend this since I am did not do it...
But CES will be in January and there will be many new devices demonstrated there.
I'm sure there are many new cutting edge devices in the works.

There is also the new Samsung Galaxy Nexus which is being announced this Friday. It will be the first phone to ship with Ice Cream Sandwich. Most other phones (like the RAZR) won't see it until end of January at the earliest.
Typically, if you like to customize things and tweak your stuff, you'll enjoy Android over iOS (iPhone). Same goes if you like having a choice in hardware. In that case, the Android phones Samsung Galaxy S II, Motorola Droid RAZR, and Samsung Galaxy Nexus are all absolute terrific choices right now.
If you don't care as much about the customization and just want a phone that works, you can't go wrong with an iPhone.
I bought the RAZR simply because I wanted the light weight and smaller profile. I don't need a 720p screen, I don't watch movies on my phone (use a tablet for that, like the Asus Transformer Prime). Motorola also is widely accepted as having the best hardware in terms of reliability (breakage from dropping) and best call quality (radios). If you want the phone with the best screen, then consider either the HTC Rezound, or the Samsung Galaxy Nexus.
Why not get an iPhone if thats what she wants? You're not really "married to Apple". It just requires iTunes (for now).
You can get a 3GS for $0 with AT&T contract. Check Apples site to see if you qualify.
For now, I'm personally happier with a cheap cell phone plan so I see iPads, iPod Touches, and unlocked iPhones as a nice option. You can also text message for free (via Wifi only I think) between Apple devices
I really wish I could get an unlimited text/data plan with per minute voice charges at a rate comparable to current low minutes voice only plans.
If she use the phone a lot, I would say go for one with at least 4" in screen size. Easier for the eyes. My next phone will be either the T-Mo Galaxy S2 (4.5") or Verizon Galaxy Nexus (4.65").
My personal favorite plan is T-Mo Pre-paid 5gb data plan with 100 minute for $30. I see voice becomes obsolete. You can use Google Voice or replace the voice minute. 5 gb is a lot of data.
