I use radmin as my remote software for my systems. I have 4 monitors and I can work all 4 properly. It costs $50 but for me it just works and that is what I wanted. (radmin.com) They have a 30 day trial.
Logmein also works but you continually have to switch from monitor to monitor. With radmin you can just scroll back and forth.
VNC never worked well for me with multiple monitors but worked great with a single monitor.
I am a fan of free but radmin is worth the one-time $50 at least for me.
I have tried them all as I was a Systems Administrator for a major hospital before trading..

RDP will allow you to span multiple monitors, regardless of the physical host video card limitations.
But as you mentioned, depending on what you want to do, RDP won't work as it will make you go full screen mode locally on multi-monitor sessions.
I have six monitors, and use four of them for a remote trading VPS via RDP. I am using Terminals (link below) which lets me specify a specific geometry for the window (WxH) and it runs using the Microsoft ActiveX DLL's. It supports remote sound, clipboard, but does not support file dragging or file sharing through shares. Which is fine by me. What it does let me do is span four monitors with the RDP tool, and still let me put local windows on top of them as needed in the course of using my computer (not full screen mode).
I've tried various VNC servers/clients, TeamViewer, etc. I found this setup to be the best.
I wish I could use SeamlessRDP (google it) but since I launch two separate applications --- Sierra Chart and MultiCharts --- it won't work (one RDP login limitation). That would have been the best scenario. So if you use just one remote app, check it out.
I use GoToMyPc which is great for 1 client monitor (e.g. laptop, home pc) -> many multiple monitors on host (e.g. office trading box). Scrolls around them really well. Sound/file transfer, usual stuff.
@Big Mike Are you saying Terminals can do many monitors on client -> many monitors on host mapped however you want?
