I like burgers out but don't make them. I love a good steak though.

If its too cold or I'm too lazy to start a charcoal fire I cook steaks in a cast iron skillet on 7. (I'm lame and have electric stove bleh)
The main thing is salting, salt heavily both sides. I'm not sure it matters how long it sits, but I like it when the steak sweats then absorbs back. For medium usually 4 minutes one side 3 the other. That's a one inch steak. at the end I add butter and spoon the butter steak fat mixture over the top. I also sear the fat.
