I don't believe I've ever seen this, it's like any other DOM or price ladder, there's liquidity on each side and the trades happen as soon as the price is hit.

I've had no problems with coinbase / GDAX and I've used them since 2013. Applied for high net worth limits not to long ago with CB and they had it approved within 2 weeks.
