Not a burger, but it is grilled...

Soaked in a brine for 12 hrs and then smoked for 2.

dinner tonight: beef ribs, one of my favorites! just seasoned with salt, pepper, cayenne plus some pecan smoke.



...and grilled cheese for my better half!

I just cooked a frozen bison burger and it was the best burger I've ever had hands down. No idea how it happened considering I've eaten many burgers all over the place but it did. I'm contemplating cooking another one.

The burger was very rare inside and cooked well on the outside. I'm slightly concerned I might have eaten raw bison but it was so incredibly good that I didn't care.

I'm having a hard time explaining the taste of the meat. Honestly I thought before I cooked it that it would taste slightly gamey, but it turned out to taste like the best beef ever.

This burger has changed my life. I have absolutely no desire to be a vegetarian anymore. I will eat this all the time from now on.
