Hello Rachel,
Interesting thread. I thought I would tell my story about going Raw Whole Food Vegan and how it affected me.

After watching my parents both dwindle away into nothingness in their final years of life, I knew I didn't want to go out like that. Not being able to think much, taking pills to offset the side effects of other pills, constant illness etc. So I went about researching and came to the conclusion that I would follow the 80/10/10 by Doug Graham and became a member of 20bananasaday.com which supports the 80/10/10 lifestyle. I went RWHV on Oct. 1 2011. Stuck with it no problems at all for the first 2 and a half months. I was feeling great and was actually waking up with energy and sometimes beating the alarm clock up! I can say for a fact I had never felt like that before with so much energy as I had always wanted to just sleep in before going RWHV. I was eating some salads but most of my greens intake was through smoothies with bananas etc in them. I was getting 2 lbs of greens a day no problem. I was eating lots of bananas and dates and other fruits as well, but bananas and dates was my main intake of energy. Like I said, I was feeling great!
But then, it happened. 3 days before my birthday I got gout! This was just 2 and a half months into the diet. I had never had gout before at all. I didn't have a minor flare up either, it was MAJOR! It went into every joint in my arch in my right foot and blew it up so big it was next to impossible to get a shoe on. Not that I would want to because of the agonizing pain of the pressure from the shoe but it wouldn't of happened anyway as my foot was too big. I made an appt. to see a foot doctor and by the time I got in my left knee was was starting to swell and get stiff. I also made an appt to see a doctor about my knee and by the time I got in to see him my left knee was so swollen that I couldn't straighten it out any more and had to go to the docs appt. on crutches. So I had to use my right foot with the gout in it for support on crutches. You want to talk about painful! IF you only really knew... The knee doc took out 3 and a half vials of fluid out of my knee. No crystals in the fluid however.
Anyway, at first I thought the probable cause of the gout was organic raw spinach (high in oxalic acid) as I had added some raw spinach to my smoothies because I had got some on sale and bought 3 lbs of it. But later I realized that it was not the spinach causing me problems but instead it was the bananas, dates, or any thing really with simple sugars in it. I can't even eat an apple today without my neck getting stiff. So I have done some research on the topic and I "THINK" I have a rare form of gout called pseudo gout. I can not eat any thing with simple sugar chains in it now or I will get stiff and start to swell. The first thing is my neck will get stiff. That is the first sign I better back off what ever is new that I have introduced into my very limited diet. Even Rice and Potato's can make my neck stiff If I have too much, which isn't very much actually. And if I focus on raw greens I will get stiff but it takes longer than eating banana's etc.
So currently my diet is two meals a day of Raw Meal meal replacement powder with 8 oz each of the following: almond milk, carrot juice, greens juice (ie Naked brand Green Boost) some chia seeds and the Raw Meal powder. That is my morning and evening meal. For lunch I have a vegan burger sandwich with what ever I want on it, but it's all healthy stuff so no worries there. I will also have a Pro Bar brand Meal bar. It has raisins in it but not enough apparently to affect me negatively. If I'm off work, with the vegan burger I will fry up some sweet potato's in coconut oil.
It's working but the problem is I have run out of energy at the end of the day. I come home from work and have a smoothie and I'm out. On my days off I take any where from 1 to 3 naps a day and yes I'm getting a good nights sleep. I know for a fact that my body is going through a healing process right now. Just trust me, I KNOW. There is no doubt about it. So I'm sure this is taking a lot of my energy. But my question to you is, what can I try to eat that will help give me energy that won't give me gout? I can go on forever eating the Raw Meal smoothies IF I have to but I got to get some more energy somehow. At least with the smoothies I get some use out of my BlendTech blender! LOL I spent a lot of money on that thing to end up making smoothies but whatever. I just want to heal and get more energy without more gout and stiffness issues.
To this day I still have some crystals in my right foot and one in my left knee that bugs me but it is better and getting better by the week, but very slowly.
Any help would be greatly appreciated, especially in the energy department!

Gosh, what a story.
Got to share this, when I was about 16 years old, a MD put me on an all meat diet for 1 year. At the end of that year, my uric acid was so high, the MD told me I was in the gout range. He seemed happy about that for some reason anyway, thank GOD I never got any symptoms maybe because I was a young girl and it was only 1 year.

I am not an MD and your situation certainly doesn't sound normal even to my ears.

Since you know the foods, that are letting you function, I would keep up with those but look into reducing the toxins you come in contact with, to begin with.
Use natural cleaners in your home, nothing with chemicals
Have a good air purifier like what Dr. Mercola sells
Have a very good water Purifier, like a reverse osmosis and perhaps one that puts minerals back in the water
Try and reduce the amount of EMF's you come in contact with.
(In London they have EMF free zones but unfortunately not in America)
I go into all this stuff on my blog, 1st page: Environment etc.

Vegan with Macrobiotic Influences: Environmental Things to Consider

Perhaps your bodily functions are suppressed do to, environmental factors?
Once I got rid of my Satellite Dish, within 6 months, my immune system was stronger because I felt stronger, my body was functioning better and I began overcoming some of my own health issues.
The idea is, we want to reduce the environmental things that could be weakening our system.
There are new degrees in the Medical School that deal with environmental diseases etc.
So try and reduce the toxins you come in contact with, do not use scented air fresheners, do not drink water from plastic bottles, try to use only natural products you come in contact with etc.

Foods that increase the immune system: Burdock Root.
It is best to get your nutrients from actual foods and not vitamins etc.
You could make a Burdock Root Tea
1 TBSP in 4-5 cups of H20, bring to boil, then reduce to simmer for 30 minutes.
Since you are sensitive, I would probably start out with simmering it for 3-5 minutes.
Drink 1/4 cup and see if you have a reaction?
No reaction, continue taking it once a day but the
next day drink 1/2 cup and keep that up, till you have gone through all the tea, which will keep in the refrig.
I would keep this up for 1 month then
simmer it for 7-10 minutes and drink 1/2 cup, see if there is any reaction.
Progress slowly, till you get to simmering it for 30ms, each step up, do for 1 month.

Health begins in the gut: so you should be taking some kind of fermented foods: sauerkraut.
You may have something going on with your digestion, so you may need to build up your digestive track first.

Have you ever had a round of antibiotics for a long period of time? Or many rounds in your lifetime?
Antibiotics destroy the healthy flora in your intestines and fermented foods will build it back up.
You don't want the fermented foods on the shelf, you buy in the stores, they aren't that good.

If your digestion isn't strong enough, yoga can strengthen the digestion.
Hint, problems with the ankles, not being able to sit on them, relates to digestion.
You should look for a yoga class in your area and see if they have anything for people dealing with a health issue.
So, they can be gentle with you and slowly work with you.

If I were you, I would look for a naturalpathic doctor in your area.
They would be able to recommend a detox program for you.
It may cost a pretty penny and it may be a stretch for you and possibly difficult but if you keep up with it, you will see results. Look for one, that a friend recommends and has a good track record.

The idea is, every week we should do some kind of fast/detox to keep our body in shape.
It can be anything from not eating bread or grains that day; to just greens, or fruit or cooked wheat berries.
It totally depends on where your body is at.

Also, make sure, you are not eating any GMO's in any of the foods or packaged foods you eat.
GMO's can create allergies and much worse.

As your system get's stronger, you can slowly test it, by adding a food to your meal plan and see how you react.
As your body functions better, is stronger etc., you will be able to expand what you eat but gradually, as you test it on each food. You could start out, with eating a green soup: steam up some zucchini and then blend it. Eat 1 cup and see how you respond. No reaction, continue eating 1 cup for 3 days.
Next time you make it, steam up Zucchini and Broccoli, blend it up, and eat 1 cup.
Greens are great for the body.
Try adding some sauerkraut to your green soup, once you know, your body can handle the green simple soup.
Rinse the sauerkraut, then squeeze out the excess liquid, rinse again, squeeze again.
Add to your soup and blend it up.
Cooked food is easier on your body, when you are dealing with a health issue.

The thing is, we do not want you to have any big reactions, so go slowly with gentle foods first, like green veggies that are steamed and blended into a simple soup. After that, test it out by adding some lemon juice, no reaction continue adding 1 more veggie: perhaps onion, see how you react etc.
Also, chew your food up well, even soup. Try chewing your food, till it becomes a liquid, start out chewing it for 15-20 times as you get use to this, with time, chew it 30-40-50 times eventually.
The more you chew the easier the digestion, the better your body will absorb it.

If you have a reaction to a green zucchini soup, you are going through some kind of detox.

If a simple Zucchini soup is too much for you, go get professional help from a naturalpathic doctor.

Perhaps, some of the packaged foods you are eating, have cooked oils and you are not getting the healthy fats, your body needs. Make sure they are not rancid old fats, which are not good for your liver.
Cooked fats, clog the liver and then the body doesn't function properly.
Daikon helps cleanses the liver but you need to do the zucchini soup first and other veggies, before going to the daikon radish.

There is a great book you should look into:
Healing with Whole Foods: Asian Traditions and Modern Nutrition by Paul Pitchford

Good luck and try out some of the suggestions above and PM me and let me know how you are doing.
Try doing the simple steamed zucchini blended soup.
No reaction continue, if you get a reaction, look into doing a detox with a professional.

There is one more thing you should consider: EFT.
Emtional Freedom Technique
You can buy a book about it on amazon, they aren't very expensive.

I healed myself of a basal cell carcinoma by doing 3 things:
remove environmental toxic things
eating healing macrobiotic foods, that were organic and whole food
and finally doing EFT, addressing the emotional issue.
That was the last key, some where deep inside me, was an emotional issue that weakened my immune system and by doing EFT, like a bunny rabbit for 3 days, it took me down the rabbit whole to emotions, I thought, I had addressed but hadn't. EFT deals with emotional to physical complaints. I used it to deal with the grief when my Mom passed away and also when I got the basal cell.
So, there might be something that can be addressed by EFT.

Sometimes issues arise because their is mold in the home, or we are near a cellphone tower etc. so look around your neighborhood and see what could be influencing your energy and health.

PS If you have a cellphone, do not sleep with it next to your bed and if you have a TV in your bedroom, make sure it is at least 10 feet from you. This is dealing with EMF stuff.
