What island are you starting on? If your planning only one island i would go to Kauai, its my favorite. Great beaches, hotels, waimea canyon, fern grotto, river to canoe on, waterfalls to swim in, hiking... its got it all. The big island has the volcano, south point, some good cliff jumping. Maui and oahu are crowded and touristy, but both have tons to do.
