2 tablespoons cornstarch
1⁄4 teaspoon baking soda
1⁄4 teaspoon baking powder
1⁄4 teaspoon salt

I can do it.. I'll have to improvise on the cod, maybe some beer instead of water?...

Can you 'emulate' a fish and chips with some supermarket Findus/Birds Eye fish fingers type food and some good frozen chips?

Well I spent a quite while living near the sea in England and the west of Ireland (we had beer battered Hake too, really great) so off the boat fresh is unforgettable.. And New Zealand.. (forget what that cod-like fish was).

Recently however I did find breaded fish fingers here, they were too strong/fishy (Caribbean red snapper probably) but I fried them to almost crunchy, fresh squeeze of lime and dipped into homemade thick carrot and ginger soup was heaven (Thai style).

Minor obsession this morning. I've gone all Harold and Kumar
